You would have to set them up to listen to different ports. They can't both listen on port 80.

Yes they can. But they will have to use different ports. Example:

Apache: Port 80
IIS: 8080

In this example, IIS is using a non-standard HTTP Port, so you would have to access it as: http://localhost:8080/.
